Made the poolish on Sunday night, then the bread on Monday night.\u00c2\u00a0 I used my new Kitchen Aid Stand Mixer<\/a> and did an okay job of it.\u00c2\u00a0 Obviously I can\u2019t post the whole recipe as it would do a disservice to the author of my favorite new book: The Bread Baker\u2019s Apprentice.<\/a><\/p>\n

The bread did not come out as airy as I would have liked, and I think that was due to me accidentally forgetting to fold up the sides a second time, and maybe that I used regular KA unbleached white flour rather than bread flour.\u00c2\u00a0 I just did not get the rise that I wanted.\u00c2\u00a0 Also, I think my dough was too dry \u2013 could have been wetter.\u00c2\u00a0 Here are a few pics of how it came out.<\/p>\n

Final product \u2013 as you can see it did not set up the crust with the airy holes that I thought it would. It\u2019s a shame.\u00c2\u00a0 The crust ended up really nice.\u00c2\u00a0 For one of my first baking endavors, I was happy.\u00c2\u00a0 Learned how to steam the oven for the first time, too.\u00c2\u00a0 Next time I\u2019ll do better.<\/p>\n
