It is, however, exactly the right time to be pulling a second pie out of a 550-degree oven.

Dough: store-bought, from Shaw’s in Sudbury. No shame. Grocery-store dough is the cheat code for home pizza, as long as you treat it right.

Proof: a couple of hours in the toaster oven on its proof setting. It’s the most underrated feature of a toaster oven and it turns cold, sulky store dough into something that actually wants to stretch.

Sauce: plain jarred pizza sauce. Nothing fancy, and it didn’t need to be.

Cooking: home oven cranked to 550°F, with the pizza stone preheated for a full hour. That hour is the secret. A stone that’s only “kind of hot” gives you pale, bready bottoms. A stone that’s been soaking up heat for sixty minutes gives you this.

The pies:

Pie #1, pepperoni and tomato: cupped pepperoni, a couple of fresh tomato slices and a sprinkle of red pepper flake, with blistered, leopard-spotted cheese and an edge that puffed up nicely. It’s cooling on a wire rack, which is the correct move because it keeps the bottom crisp. A loaf of bread is photobombing from the back, which is a separate and suspicious level of carb ambition.

Pie #2, tomato and green pepper: the veggie entry, launched on parchment. A slice of tomato and strips of green pepper over a deeply golden, browned cheese layer. The crust edge went all the way to dark char, the good kind, that “pizzeria oven” look you’re chasing every time you crank a home oven to its max.

Review: this is what a home oven at full blast plus a properly heat-soaked stone can do. Real char on the rim, a bottom that held up, and two pies’ worth of evidence that you don’t need an outdoor pizza oven to get a respectable crust. The third shot shows pie #2’s very free-form shape. We’re calling it “rustic.” Round is overrated.

For the last at-home pizza on the blog, a cookie-sheet job at 450, see the homemade pan pizza. This one’s the hot-and-fast sibling.

Two pies, one stone preheated for a full hour, and Shaw’s dough proofed in the toaster oven.
