Monday Night Buffalo, No Notes Required

Mondays are bad. Monday wings are a public service.

This is the classic build, the one every other wing on this blog gets measured against: glossy, bright-orange Buffalo sauce clinging to every surface, pooling on the plate in that way that guarantees you’ll need the whole napkin stack. A pile of drums and flats, celery and carrot sticks standing by in a glass bowl, and a little steel ramekin of dressing on the side.

How they were cooked isn’t on the record. The photos don’t say and nobody wrote it down. Judging by the texture, though, the skin held up under all that sauce without going soggy, which is the whole ballgame with Buffalo-style. Whatever happened before the toss, it worked.

No gimmicks, no “fusion,” no honey-sriracha-maple-bourbon whatever. Just hot sauce, butter energy and a Monday that got noticeably better around 6:23pm.

Invented detail, flagged as such: I’ll guess the ramekin was blue cheese and that the ranch-versus-blue-cheese argument was had, again, and blue cheese won, again.
